Mature Farmhouse Cheddar Loaded Nachos

  • Simple yet delicious, loaded nachos with spicy black beans topped with Mature farmhouse cheddar. Follow along with James here.

    Shopping list

    • Handfuls of Barber’s Farmhouse Cheddar, grated
    • 2 large bags of nacho chips
    • 1 red onion, finely diced
    • 2–3 cloves garlic, finely chopped
    • 1 tbsp sweet smoked paprika
    • ½ tsp coriander seeds
    • ½ tsp cumin seeds
    • 1 tsp smoked garlic granules
    • Pinch of chipotle chilli flakes
    • 1 tbsp olive oil
    • 2 tins black beans, drained
    • ½ tin chopped tomatoes
    • 1–2 tbsp tomato purée
    • Sea salt & cracked black pepper
    • 2 tbsp chopped coriander
    • 2 limes, to serve
    1. Step 1

      Make the beans: Sauté onion and garlic in olive oil until soft. Add all the spices and cook for 1–2 minutes to release their flavour. Stir in the beans, chopped tomatoes, and tomato purée. Simmer for 10 minutes and season well.
    2. Step 2

      Assemble: On a large baking tray, scatter nacho chips, sprinkle with grated Mature Cheddar, and toss with fresh coriander.
    3. Step 3

      Grill: Pop under a hot grill at 200°C for 5–10 minutes until melted, golden, and bubbling. Bring to the table with a generous ladle of spicy black beans (or pulled beef rib if you’re feeling indulgent) and plenty of lime wedges for squeezing.
