    • 200g Wookey Hole Cave Aged Goat’s Cheese, grated
    • 1 pre rolled puff pastry sheet
    • 4 tbsp cranberry sauce
    • 5-6 walnuts, roughly chopped
    • Extra goats cheese, for sprinkling
    1. Step 1

Prepare the filling: Lay the puff pastry sheet flat on a clean surface. Evenly spread the cranberry sauce right to the edges. Sprinkle over the chopped walnuts, followed by a genrous, even layer of grated cave-aged goats cheese.
    2. Step 2

To shape the palmiers, you have two options. For the classic shape, roll the pastry from both long sides toward the centre until the two rolls meet in the middle. For a simpler pinwheel style, roll the pastry tightly from one long edge into a single log.
    3. Step 3

Transfer to the fridge for atleast 20-30 minutes. This helps firm the pastry and gives cleaner slices. Preheat the oven to 200°C (fan 180°C). Sliced the chilled pastry into thin rounds (about 1cm thick). Place on a lined baking tray, leaving space for spreading. Sprinkle lightly with extra goat’s cheese. Bake for 15 minutes or until puffed, deeply golden and crisp.
