Prepare the filling:
Lay the puff pastry sheet flat on a clean surface. Evenly spread the cranberry sauce right to the edges. Sprinkle over the chopped walnuts, followed by a genrous, even layer of grated cave-aged goats cheese.

To shape the palmiers, you have two options. For the classic shape, roll the pastry from both long sides toward the centre until the two rolls meet in the middle. For a simpler pinwheel style, roll the pastry tightly from one long edge into a single log.

Transfer to the fridge for atleast 20-30 minutes. This helps firm the pastry and gives cleaner slices. Preheat the oven to 200°C (fan 180°C). Sliced the chilled pastry into thin rounds (about 1cm thick). Place on a lined baking tray, leaving space for spreading. Sprinkle lightly with extra goat’s cheese. Bake for 15 minutes or until puffed, deeply golden and crisp.
