Make the beans: Sauté onion and garlic in olive oil until soft. Add all the spices and cook for 1–2 minutes to release their flavour. Stir in the beans, chopped tomatoes, and tomato purée. Simmer for 10 minutes and season well.

Assemble: On a large baking tray, scatter nacho chips, sprinkle with grated Mature Cheddar, and toss with fresh coriander.
Step 3
Grill: Pop under a hot grill at 200°C for 5–10 minutes until melted, golden, and bubbling.
Bring to the table with a generous ladle of spicy black beans (or pulled beef rib if you’re feeling indulgent) and plenty of lime wedges for squeezing.
