1833 Croque Madame with Cider & Cheddar Sauce

  • Barber’s 1833 Vintage Cheddar Croque Madame, cider cheese sauce, chutney on toasted sourdough, and of course that golden fried egg on top. Rich, tangy, and totally indulgent.

    Shopping list

    • For the toastie:
    • 4 Slices of sourdough bread
    • 2 tbsp of apple or onion chutney
    • 2 large eggs
    • Butter for spreading & frying
    • Fresh sage leaves, for garnish
    • For the cider cheddar sauce:
    • 200g Barber’s 1833
    • 85ml double cream
    • 50ml dry cider
    • 1 tsp wholegrain mustard
    • 1 clove roasted garlic
    • Pinch of grated nutmeg
    • White pepper, to taste
    1. Step 1

      In a pan, gently warm the cream and cider. Stir in mustard, roasted garlic, nutmeg, and white pepper. Add the grated 1833 cheddar and stir until melted into a smooth, rich sauce.
    2. Step 2

      Lightly butter the sourdough slices. Spread a generous layer of chutney on two slices, then top with the other slices to make sandwiches.
    3. Step 3

      Spoon the cider cheddar sauce over the tops of the sandwiches. Place under a hot grill for 3–4 minutes until bubbling and golden.
    4. Step 4

      Fry two eggs until just set. Place one on top of each sandwich. Garnish with crispy sage and cracked black pepper.
