Coastal Cheddar & Apple Galette

  • This Coastal Cheddar & Apple Galette is made with nutty buckwheat crêpes, Wiltshire ham, caramelised apple, and a rich cheddar mustard sauce. Sweet, savoury, rustic… and just perfect for brunch. Follow along with James here


    Shopping list

    • For the galettes (buckwheat crêpes):
    • 80g buckwheat flour
    • 5 medium eggs
    • 250ml milk
    • 1 tbsp melted butter (plus extra for frying)
    • pinch of salt
    • For the filling:
    • 100g Coastal Cheddar, grated
    • 2-3 apples, peeled, cored & sliced
    • 20g butter
    • 1 tsp sugar
    • pinch of cinnamon
    • 4 tbsp single cream
    • 1 tsp wholegrain mustard
    • 2-3 slices Wiltshire ham
    • Fleur de sel or flaky sea salt to finish
    1. Step 1

      Whisk together buckwheat flour, eggs, milk, melted butter, and a pinch of salt until smooth. Rest for 20 minutes.
    2. Step 2

      In a frying pan, melt butter and sauté apple slices with sugar and cinnamon until golden and caramelised.
    3. Step 3

      Gently heat cream, mustard, and half the grated cheddar until melted into a smooth sauce.
    4. Step 4

      Heat a lightly buttered pan. Pour in a thin layer of batter, swirling to coat. Cook for 1–2 minutes per side. Keep warm under a tea towel while making the rest.
    5. Step 5

      On each galette, spread a spoonful of cheese sauce, then top with ham and caramelised apple. Fold over into a square or triangle, sprinkle with the remaining cheddar, and bake at 180°C for 5–7 minutes until bubbling.
    6. Step 6

      Finish with a pinch of fleur de sel. Perfect for brunch, with a little green salad on the side.
