Step 1
Preheat oven to 180°C (fan). Line a tray with baking paper.

Squeeze the sausage meat into a bowl (or use pork mince with a little breadcrumb). Add finely chopped onion, thyme, chilli jam, and most of the grated Dorset Red. Season well and mix thoroughly.

Unroll the puff pastry and cut it lengthwise into two strips. Divide the sausage mix down the middle of each strip. Fold the pastry over the filling and crimp to seal. Slice into chunky rolls.

Place on the lined tray, brush with beaten egg, and sprinkle the remaining grated cheese on top. Bake for 30–40 minutes, or until golden, crisp, and smelling outrageously good. Let cool slightly (if you can wait). Serve warm or cold
