Leek & Coastal Cheddar Tear & Share Bread

  • This Leek & Coastal Cheddar Tear & Share Bread is made for gathering around the table, pulling apart golden, cheesy dough balls, and dunking them in soup or garlic butter. Follow along with James here.


    Shopping list

    • For the bread dough:
    • 500g plain flour
    • 350ml warm water
    • 50-100g Coastal cheddar, grated
    • 1 leek, finely sliced and caramelised in a pan
    • 1 tbsp finely chopped tarragon
    • 1 tbsp wholegrain mustard
    • 1 tbsp olive oil
    • 7g yeast
    • For the topping:
    • 1 beaten egg to glaze
    • 50g Coastal cheddar, grated
    • 1 tbsp finely chopped chives
    1. Step 1

      Mix all your bread ingredients together in a large bowl. Knead for 10-15 mins or use a food processor with a dough hook. Once the dough feels smooth and elastic form into a ball and dust with a little extra flour. Cover and leave to prove at room temperature for 1-2 hours or in the fridge overnight.
    2. Step 2

      Cut into about 20 equally sized balls. Then roll into dough balls and place on a lined baking tray.
    3. Step 3

      Preheat your oven to 200˚C and brush your tear n share doughballs with a little beaten egg. Allow to prove for a second time for 30-45 mins. Then bake for 20 mins.
    4. Step 4

      Remove from the oven as they start to brown and cover with grated cheese. Return to the oven for a final 8-10 mins.
    5. Step 5

      Serve with garlic butter or a rustic farmhouse style soup.
