Preheat a large non-stick frying pan or cast iron skillet and prepare your quesadilla.
Step 2
Top each one with coriander, a spoonful of seasoned beans, grated cheese and jalapenos.
Step 3
Fold over and cook with a little oil for 2-3 mins each side until the tortilla crisps up and browns whilst the cheese inside melts. Serve with extra chopped coriander.
