Cave Aged Goats Cheese

Description

Cave Aged Goats Cheese is a deliciously mild, savoury, firm cheese which is similar to a traditional cheddar in texture but with a distinctive yet subtle ‘goat’ flavour. The Cave environment adds yet another dimension to the ageing process. The year round constant 12 degrees centigrade and humidity bestows the cheese with the added benefit of rich, earthy and nutty flavours with caramel top notes.

Certifications

Goat’s Cheese has picked up a string of awards including a Super Gold and the title of Best British Cheese at the World Cheese Awards 2016, a Gold at the 2017 British Cheese Awards and a Gold and Silver at the 2017 International Cheese Awards.

Wine Pairings

A young, fresh white wine with good acidity is great match with this mild, savoury cheese with just enough goaty notes! Perhaps a Sauvignon Blanc from the Loire in France like Sauvignon Blanc, Vigneron de Valencay or maybe a Gruner Veltliner from Austria such as Lois GV, Weingut Fred Loimer.

Food Pairings

Cave Aged Goat’s Cheese, with its tangy, earthy character, pairs wonderfully with figs, walnut bread, and a drizzle of honey. It’s also delicious alongside roasted beetroot or a crisp white wine to lift its sharpness.
